The bike was made at HUB Bicycle Shop, which is currently closed but reopening in a different space in the West Village. The owner of the shop (and maker of the black cabinet) is George Bliss, whose number is 212.965.9334. The tricycle itself is made by Worksman. Let me know if you have more questions!

The paper was never officially published, so you might not actually be able to cite it in a dissertation? You might just have to plagiarize? Just kidding. But I’m not sure what the rules are there. If you CAN use it, I guess the citation would go something like this:

I used to be a cook at the Spotted pig, and I now work at Franny’s Restaurant in Brooklyn. I saw the piece today in NY Mag about you as forager. It said you spent time in Umbria working on a farm. Having just returned from a 3 and a half week vacation from Italy and falling in love with the region of Umbria, I was wondering if you had any contacts there in restaurants? I have thoughts of possibly returning there to work if it is feasible.
Anyway, keep up the good work, and say hello to April and company for me.
