Game tonight was another warm up. The Aggies are coming off a big loss to the Hawkeyes, and went into Ames a big underdog. Turned out as expected.
Another game with Kalscheur not starting, interesting. Osun making his presence known under the basket, and subpar 3 point shooting again (Osun is 1 for 1 though!). Have to Dial that Up!

ISU basketball started again! Football has been a bit of a disappointment, so a change of pace was good. We aren’t returning a lot, but we got some nice pickups in recruiting and transfers. Lost Williams to a torn ACL, but other new faces were a nice surprise.
Tre King is out at the moment. He was a coach at my nephews basketball camp in the summer, and was well regarded.
Eli King is a freshman, and had cleanup minutes in this startup game.
Caleb Grill is a returning senior, and looks to be one of the building blocks. He was going strong after rebounds, but didn’t have a good shooting night.
Tamin Lipsey is a freshman, starting at point guard, following another freshman, Tyrese Hunter. He’s got big shoes to fill.
Damarion Watson is another freshman, and was a really nice surprise in this game. Showed a lot of effort, hustle, and speed. He’ll be fun to watch.
Aljaz Kunc (Jaz) is a returning senior, and one of the key members of last year’s Sweet 16 run. Looks like he has the same sweet shot at last year.
Robert Jones also returns as a senior from last year’s squad. He was a backup last year, and had an up and down season. He looks a lot more fit this year, and he’ll need to make some noise inside. Announcer had some fun, nicknaming him Robert “Big Rob Energy” Jones every time he announced. We’ll see if it sticks.
Jaren Holmes is a senior transfer from St Bonaventure. He was a good guard to add, as it seems he is able to make a layup, much needed on this team. We are a bit offensively challenged, so every bit helps.
Osun Osunniyi is another senior transfer from St Bonaventure, and seems to be the showcase signing for this class. 6 10, and his reach is longer than that. He’s a premier rim protector, and really showed that off tonight.
Gabe Kalscheur is a senior returning from last year’s squad. He really shone in the tournament games, and started most of the season last year. We’ll need a good shot percentage and his defense this year. Surprisingly, he didn’t start the game. We’ll see how this develops.
Conrad Hawley is a sophomore transfer, playing bench minutes.
Hason Ward is a senior transfer, and was a nice surprise with his effort tonight. Don’t know much about him, but I think we’ll see a lot of him this year.
Mentioned above Jeremiah Williams is out with a torn ACL. He’s a junior transfer from Temple.
Not much of an opponent, IUPUI was held to 22 points in the first half, and 17 in the second. Defense continues to be a focus for TJ Otzelberger’s Cyclones. Certainly showed that tonight.

I started with flank steak, about 2 pounds. Pounded it flatter, but wound up butterflying it, and having 4 strips. I’m limited by the size of the press, which will become a little clearer later on.
I put the pieces together, to make even rolls. You want even thickness, so the press will be uniform. Again clearer at the end.

get the strips laid out, and sprinkle with spices, outlined here. The ratios here were maybe just a bit heavy for the 2 lb flank I had. More meat, increase the ratio of these.
- 1 TBS minced onion
- 2 TBS Salt
- 1/2 tsp pepper (I went heavier, I like pepper)
- 1/4 tsp allspice
- 1/2 tsp curing salt #1
A Note on curing salt:
The original recipe called for saltpeter. This is for curing, and the lovely red color. It is not absolutely necessary. This is sodium nitrate, and is a controlled substance. I have bought it in the past at a pharmacy, but you might have difficulty finding it. Curing salt, or pink salt, comes in 2 types, #1 and #2. When the product is a cooked product, use #1. Cured sausage, like pepperoni, salami, etc, use #2. You can correct me in the comments but that was the finding of my research online. It is obtained at spice stores, or order on Amazon. Remember, #1
Sprinkle the mix on the spread out rolls. Spread a packet of gelatin on there if you wish, to gel up the juices a bit more.

Roll these up, tie them off with string, to keep their shape through brining, cooking and pressing. There are many videos online about how to do this, I just did this my way.

Brining will be done for 7-10 days. I used 2 quarts water, with 2 cups salt and 1/2 teaspoon of curing salt #1. Put this in a pan in the refrigerator, and just let it sit. I had a weight on top to keep them submerged. You could also put this in a bag, in a container, and rotate the bag periodically.
After the brining period the rullepølse is cooked. Traditionally it is boiled slowly in water, but I elected to use sous vide cooking. Vacuum sealed, then cooked at 155 for 6-7 hours.

After cooking/boiling/baking, put them in the press, and press the meat together. My press is wood with bolts, but you could use 2 baking pans and tie them up with string.


Refrigerate this overnight.
After cooling, remove from press, cut out the string, and slice thinly. Great flavor, with the allspice, salt, pepper and onion. sous vide cooking make it pretty tender.

Danish sandwiches like this are traditionally served on rye bread, open face style. A little aspic, and some mustard for color, and you have yourself a Danish treat! My favorite lunchmeat of all time!

First game with a changed lineup, Conditt started for Young. About 5 games too late on that move. Also, Lewis off the bench first, and he dropped in 10 first half points. Since he usually languishes on the bench, that’s like 10 free points, something that the Cyclones seem to run short of.
Much better discipline, drove to the basket a lot more, instead of taking ill-advised 3 point shots early in the count. That showed, because the percentages were higher, and the scoring went up. All around good game for the good guys.

]]>This started out normally, but went to hell in the second half. Led by 9 at the half, but gave up 46 in the second half, and couldn’t get our own baskets to go in. It seemed like everything that the Rattlers threw up in the second half went in, including an incredible shot made at the end, with Conditt in the guard’s face out on the line.
This is gonna be a long year. Took a while to motivate myself to post this.

]]>Haliburton didn’t run the point, but that didn’t seem to affect assists, as the Cyclones gathered up 26 of them. There were a lot at the beginning, before the letdown at the end of the game. Tyrese finished with 22 points, most in the first half where he was the first choice to score. His 3 point shooting was a lot better than the rest of the guards. Lots of assists off of made baskets, so shot selection was better, and lots more shots made. Terrance Lewis provided a big boost off the bench for the second game in a row. Good to see things going well for him. Conditt and Young had a good game in the paint, but that might be more due to the fact that Ft Wayne didn’t have a good center.
All in all this was a good answer after the lackluster (spit) Iowa game. Much better performance, even if it was over a lesser opponent.

]]>Iowa outplayed ISU from the opening tip to the end. Iowa State trailed by as many at 18 in the first half, but had the deficit down to 15 at the half.
Early in the 2nd half, ISU got the lead cut to 7, but that’s as close as they got. They started attacking the basket, getting the ball inside, which was what cut the lead. But they strayed away from it, and got down by as many as 20+ in the 2nd. Got it closer at the end, but couldn’t cut it down to single digits.
Easily the worst performance of the year. Terrance Lewis came off the bench, and impressed, though. His was the best performance of the night, and I look forward to seeing more of him in coming games.
]]>Definitely the most physical game we’ve played this year, we started out very cold. Luckily the Pirates were also cold, and we went into the half with a 28-26 lead. Scoring really picked up in the second half. We weren’t on fire from 3 again, finishing 4-19. Nixon did a really good job on Powell, keeping him in check most of the game. The game was won in the paint, and the Cyclone bigs had their best game in a while. The Pirates got a lot of calls, and non-calls, but the Clones played through it for a well deserved win.

The Roos stuck with us most of the game. Lackluster defense at times kept Kansas City in the game. We hit 3 3-pointers, then went cold. Second half we went cold, and only hitting 90% of our free throws kept us in it. We started hitting some threes at the end, pushing the end margin to +18 for the Cyclones, only .5 short of covering!
79-61 for this one. Once again we played to the level of the competition. Jacobson had a good game, only missing 1 3-pointer, and hitting all his shots from the floor. Bolton hit double digits from the foul line, and the Cyclones finished 22-26 from the charity stripe, uncommon for the Cyclones. However, Haliburton had an uncommon amount of turnovers, with 6.
We’ll have to straighten out some behavior before Seton Hall comes to town on Sunday at 8!
