Eggplant, Spinach, Cream Cheese and Agave Sandwich
Eggplant, Spinach & Cream Cheese drizzled with Agave.
Inspired by all those honey covered, goat cheese sandwiches on cafe menus in Amsterdam.
I made the "cream cheese" by straining soy yogurt and adding crushed garlic, salt and black pepper. It comes out somewhere between cream cheese and goat cheese depending on how long you strain it and how much spice you add.
EGGPLANT IS MY FAVORITE!
Have I mentioned that before??
