This week’s menu starts strong and kind of fades. Oh well, we all have weeks like that. As I say, you do the absolute best you can and pray for God to bridge the gap.
LUNCH:
Monday Shredded Chicken – I use an old family recipe for what we called Chicken Buns, since we no longer use buns, we just do shredded chicken. Jodi and the kids love it. I never hear complaints that they don’t get the bun and if you really need something, wrap it in a lettuce leaf. Serve with some veggies. Good meal!
Tuesday Pulled Pork same as shredded chicken, serve it on a lettuce leaf if you’re dying to wrap it.
Wednesday PB&J (Say WHA???) How could I possibly do a PB&J on Paleo? This happened by accident, but a few weeks ago we had Paleo Breakfast pizza for dinner. Kids and Jeremy loved the crust so I decided to modify a bit and voila, we now have a crusty/bread type thing that makes for a PB&J solution. This is great for days when Jodi wants to do a picnic in the park with the kiddos. Oh PLEASE NOTE: we don’t use peanut butter – I just haven’t told my kids different. I make homemade cashew butter. I’ll post the bread recipe on a follow up post.
Thursday Chicken Strips — SIMPLE! Take some chicken, cut into strips, use an egg wash, roll in almond flour, salt and pepper. Bake
Friday Roast
DINNER:
Sunday Pulled Pork (yep, we’re even using BBQ sauce, and no it’s not Paleo. It’s Kansas City Cowtown. yep I know it’s not good for us, yep I know it has sugar, yep I know it has a host of ingredients that could have me banned from the cave.) If you’re trying to lose weight don’t do the BBQ, use extra peppers and spices for flavor. It’s delicious. This is a small cheat and sometimes we have to fall off the wagon built with stone wheels. It’s not the end of the world people.
Monday Chicken Nacho Salad – I am making a boat load of shredded chicken as we speak. Part of it will go for the chicken buns, no bun, please. And the rest is going to be spiced up with peppers and seasoning. We will use it to make a spicy chicken nacho salad. Pick your toppings. You know how you like your salad.
Tuesday Ham Steak – Yeah, not much commentary needed
Wednesday Beef Roast – 1 chucke roast, 2 onion, 3 cloves garlic, 6 carrots… shove them all in the cast iron dutch oven, turn on 250 at 9:00am. By 6:00 dinner will be outstanding.
Thursday Breakfast for dinner – will probably make a Paleo apple cinnamon muffin of some kind and serve it with eggs.
