Unless otherwise specified, the recipes below are cooked in medium to low heat. If you are cooking on a hotplate it is best to remove the cooking pan from the hotplate after turning off the heat to avoid overcooking from the hot surface.
NOTE: In Indian (particularly Bengali) cuisine, “main course” has a different meaning when compared to Western cuisine. You typically prepare 2-3 (or more!) dishes, at least one of which should either be variant of rice (fried rice, jeera rice, pulao) or Indian flat bread (ruti, porota, luchi).
